It's hard to believe how much he's grown up since he first started pursuing his passion for cooking/baking. What's even better about his love of food, is that when he makes a dish, he learns to appreciate the ingredients more often than not. Take peaches, guess who enjoys them now???  😁 🍑

Today's Star Wars recipe was fine-tuned and prepared by Chef Bretto. It's a recipe that's been around for many years in our family and recipes similar to this are online.

I don't normally care for the smell or taste of peaches, but I must tell you, he's made a peach-liker out of me! I think it's because he added more fresh grated nutmeg and cinnamon to this. He's a spice lover!

Spicy Peach Cobb Vanth Recipe

Star Wars - Spicy Peach Cobb Vanth
A spicy version of Peach Cobbler from the Star Wars Mom.
Ingredients
  • 8 peeled, pitted, and sliced peaches
  • 1/3 cup sugar
  • 1/3 cup dark brown sugar
  • 3/4 teaspoon freshly grated nutmeg
  • 2 teaspoons cinnamon
  • 1/4 medium lemon fresh lemon juice
  • 1 Tablespoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1/3 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1/2 cup butter
  • 1/3 cup hot water
  • 1/4 cup cinnamon and sugar
Instructions
1. Preheat oven to 425 degrees Fahrenheit. Butter a 13x9 pan.2. Add peaches, lemon juice, 1/3 cup white sugar, 1/3 cup dark brown sugar, nutmeg, cinnamon, and cornstarch to a bowl. Mix well.3. Pour into prepared 13x9 pan and bake for 10 minutes. 4. Meanwhile, mix the flour, 1/3 cup white sugar, 1/3 cup dark brown sugar, and baking powder. Cut in the butter until it forms small pieces of dough. Add hot water and mix until it forms a dough. Drop by tablespoonfuls onto the peaches, until it is well distributed across the top of the peaches. 5. Sprinkle dough with a thin layer of cinnamon and sugar. Bake for 20 minutes. Remove from oven and add another thin layer of cinnamon and sugar. Place back in oven and bake for another 10-15 minutes, until golden brown. 6. Serve warm or cold. Top with ice cream or whipped cream.
